Fruity and refreshing wild fizz

Craving a sparkling, refreshing, and flavourful summer mocktail? This wild cucumber, blueberry, and cardamom fizz combines the fruity sweetness of Quebec wild blueberries with the freshness of cucumber and the slightly spicy kick of ginger. All topped with a perfectly chilled homemade sparkling water made with Indigo Soda. 

Perfect for an alcohol-free aperitif, a patio get-together with friends, a summer BBQ, or simply to cool down on hot days, this elegant mocktail will quickly become a seasonal favourite. A local, simple, and sparkling recipe to enjoy on any occasion.

Ingredients

  • 1 Toundra Lebanese cucumber, sliced
  • 1 oz (30 ml) fresh lime juice
  • 10 ml (2 tsp) fresh grated ginger
  • 15 ml (1 tbsp) maple syrup
  • 30 ml (2 tbsp) Toundra wild blueberry and cardamom spread, divided
  • 120 ml (1/2 cup) sparkling water, well chilled

  • Ice cubes

For garnish

  • Cucumber slices
  • A few wild blueberries, when in season

Preparation

In a shaker, lightly muddle the cucumber slices with lime juice, ginger, and maple syrup. Add 2 tbsp of blueberry and cardamom spread, then mix. Add ice cubes and shake vigorously to chill the drink thoroughly. 

In a cocktail glass, place 1 tbsp of Toundra wild blueberry and cardamom spread and ice cubes. Using a cocktail strainer, strain the mixture from the shaker and pour over the ice. Add a few cucumber slices, then gently top with sparkling water to keep the bubbles intact.
