Finally, the season for outdoor happy hours is here. To create refreshing drinks at home, nothing could be simpler than a sparkling water machine and Indigo Soda CO₂ cylinders.
A local company, Indigo Soda offers cylinders compatible with all machines on the market, more affordable than major brands, and much more environmentally friendly than single-use bottles.
This mocktail is very simple to make, and the syrup can be prepared in advance. The strawberry and rhubarb combination is a classic of our Quebec summers, perfect with fresh bubbles.

Ingredients
- 1 cup rhubarb, cut into small pieces
- 1 cup strawberries, hulled and sliced
- 1 sprig fresh rosemary
- 1 cup water
- 1/2 cup maple syrup
- A few ice cubes for the shaker and a few for your glass
- 2 ounces strawberry, rhubarb, and rosemary syrup
- 1 ounce lemon juice
- 1 teaspoon apple cider
- Optional – Strawberries, rhubarb ribbon, and rosemary for garnishing your glass!
Preparation
For the syrup
- In a saucepan, add all syrup ingredients and bring to a boil.
- Then reduce to low heat and simmer for about ten minutes.
- Remove from heat, mash the mixture with a fork, and let cool.
- Strain the syrup through a sieve and store in the fridge.
For the mocktail
- In a shaker, add a few ice cubes, the syrup, lemon juice, and apple cider vinegar, and shake vigorously to mix well and chill everything.
- Pour into a cocktail glass over a few ice cubes.
- Top with sparkling water.
- Garnish to your taste or drink as is.
